COMMENTS: Red -- Shredded beef was cooling in food depths above 8 inches. Proper depth is less than 2 inches. Tamales, chilis, eggs, Mexican rice, beans were kept hot at 109°F to 125°F at steam table and food warmer. Cardboard box of raw hamburgers was kept on rack above cooked meats. Raw meats should be kept on bottom shelf. Repeat violation. Blue -- Floor at hot line is very much damaged and no longer easily cleanable. Repeat violation. Cleaning is needed under equipment at hot line. Wiping cloths didn't have any residual of sanitizer. All food workers must have food-handler card. Repeat violation. General -- Reinspection will be conducted.

IHOP Restaurant Aug. 9 Routine 10 15

COMMENTS: Red -- Shell eggs were found at 65°F to 67°F at lot line. Insufficient ice was used for cold holding. Blue -- Wiping cloths at hot line didn't have any residual of sanitizer. Wiping cloths must be returned to sanitizer bucket between uses. General -- Temperatures in reach-in and walk-in coolers were great. Compliance rating: 94 percent.

COMMENTS: Red -- None noted. Blue -- Repeat violation: In-use dispensing utensils (rice molds, spoons, etc.) with residue to foods should be kept in iced water (45°F or colder) or very hot water (140° or above). Ledge inside ice machine needs cleaning and sanitizing on a routine basis. General -- Hot temperatures of chicken teriyaki were great. Compliance rating: 98 percent.

COMMENTS: Red -- Sliced cooked chicken was kept at open-top refrigerated make table between 40°F (bottom of insert) to 55°F (top of container). Inserts were filled up completely. Correction: Amount of food in inserts was reduced. Blue -- None noted. General -- Very good hot holding. Temperatures of foods in walk-in cooler were excellent. Compliance rating: 98 percent.

Should be initially heated to 140°F and steam warmer must be preheated to above 140°F before food is placed in it. Blue -- Replace broken thermometer in deli fridge. Bag of potatoes and tomatoes store 6 inches above floor. Flies present in kitchen and throughout back of establishment. General -- Disposable gloves used to minimize hand contact with ready-to-eat foods. Final cooking temperatures of fish properly above 140°F. Compliance rating: 92 percent.

Blue -- Provide bulb shields in dishwasher area. Food-handler's cards or copies not accessible. General -- Proper food storage observed in two kitchens and lounge. Compliance rating: 97 percent.

COMMENTS: Red --In walk-in refrigerator, noodles in water, salmon mixture was 60°F and 67°F in middle, in covered pans. Sneeze guards adequate. Good hot and cold food temperatures. Blue -- Food-handler's cards needed. Lighting is poor in back of walk-in freezer. General -- None noted. Compliance rating: 91 percent.

*POINTS KEY: Red violations are those most likely to cause food-borne illness and must be corrected at the time of inspection. Blue violations relate to the overall cleanliness and condition of operation and should be corrected by next inspection. Any establishment receiving more than 35 red or 60 total points is automatically reinspected within two weeks. If an establishment exceeds those limits twice in a calendar year, it is mandatorily closed for at least 24 hours.
