COMMENTS: Red -- Fried rice was being cooled in walk-in cooler in containers with food depth between 5 to 8 inches. Food depths must be 2 inches or less for solid foods. Repeat violation: Raw chicken was kept at room temperature between 40°F to 63°F. Chicken must be kept cold at 45°F or less. Blue -- Several bags of raw chicken were left at room temperature to thaw out. Thawing must be done in walk-in cooler or under cold running water. Repeat violation: All workers must have up-to-date food-handler cards. Repeat violation: Food sacks in the reach-in cooler at hot line need repair or replacement. The area under the fans needs fixing. Cleaning and sanitizing of reach-in coolers, inside and out, must be completed. The floor of the entire kitchen must be cleaned and sanitized. Cleaning of hand-washing sink at hot line must be completed. Cleaning of shelvings under microwave and the work table at hot line must be completed. Compliance rating: A re-inspection will be conducted.

COMMENTS: Red -- Large roast beef 8 1/2 pounds was cooled in walk-in cooler at 48°F to 50°F. Proper cooling of solid foods such as roast beef requires foods to be 4 pounds or less. Several potentially hazardous foods were found in walk-in cooler at 47°F to 48°F. Walk-in cooler thermometer was broken, and air in walk-in cooler was measured at 48°F. Foods must be kept cold at 45°F or less. Roast beef at buffet line was kept between 116°F and 135°F. Hot-holding temperatures must be 140°F or above. The hot-holding device was insufficient and faulty. Roast chicken and deep fried chicken were kept at buffet line between 126°F and 143°F. Hot holding temperatures must be 140°F or above. Blue -- Dishwashing machine didn't reach sanitizing temperature. While waiting for equipment to be repaired, sanitizing phase of dishes and kitchen utensils must be completed manually in 1 teaspoon or bleach in one gallon of water. The freezer door at hot line and the seal strip of ice machine must be repaired or replaced. The walk-in cooler must be provided with a working thermometer. Food racks in walk-in cooler are rusty, and repair is needed. All workers must have up-to-date food-handler cards. General -- A re-inspection will be conducted. Compliance rating: 82 percent.

COMMENTS: Red -- None noted. Blue -- The drain hose from the ice cream scoop holder is directly in garbage can filled with water and a pump with another hose to a drain. Keep an air gap between the hose and water to prevent back flow. Compliance rating: 99 percent.

COMMENTS: Red -- None noted. Blue -- Packages of delivery boxes on floor. All food and related items need to be six inches off of the ground. General -- Nice improvement from last inspection. Compliance rating: 99 percent.

*POINTS KEY: Red violations are those most likely to cause food-borne illness and must be corrected at the time of inspection. Blue violations relate to the overall cleanliness and condition of operation and should be corrected by next inspection. Any establishment receiving more than 35 red or 60 total points is automatically reinspected within two weeks. If an establishment exceeds those limits twice in a calendar year, it is mandatorily closed for at least 24 hours.
