-COMMENTS: Red -- Various milk pitchers on center temperatures varied from 102°F to 57°F, must be placed in refrigerator between uses. Blue -- Spoons with water at 63°F. Water storage must be below 45°F or above 140°F. Ice must be floating in water to keep water below 45°F. Replace ice more frequently. General --None noted. Compliance rating: 92 percent.

-COMMENTS: Red -- Observed bare hand-to-food contact with ready-to-eat foods by cook. Container of Decon found under counter in wait station. Decon attracts rodents and should only be used outside of food service establishment. No evidence of rodents noted during inspection. Blue -- Half the refrigerators do not have thermometers. Check all units and replace as needed. Door track of refrigerator that is closest to make case has collection of food debris. Wall behind wait station is covered with spills. Please increase cleaning frequency of these two areas. Could not find food-handler's cards for nine workers. Obtain by Nov. 23, 2001. General --Submit plans for new walk-in. Compliance rating: 94 percent.

*POINTS KEY: Red violations are those most likely to cause food-borne illness and must be corrected at the time of inspection. Blue violations relate to the overall cleanliness and condition of operation and should be corrected by next inspection. Any establishment receiving more than 35 red or 60 total points is automatically reinspected within two weeks. If an establishment exceeds those limits twice in a calendar year, it is mandatorily closed for at least 24 hours. Comments are taken directly from latest county inspection reports, which are available at each food establishment and at the Thurston County Environmental Health Office.
