Obtain refrigerator thermometer for each unit by Dec. 27. Knife stored between counters. Large container of frozen chicken sitting on floor. Pieces between 37°F and 67°F (outside surface temperature). Must thaw in refrigerator or under cold, running water. Fingerprint grime collecting on walk-in door. Light in freezer does not work. General -- Very clean kitchen, sushi boat area. Compliance rating: 96 percent.

-COMMENTS: Red -- None noted. Blue -- Grime collecting on shelf/wall below heated pick-up window. Grease, etc. collecting under fryer/grill. Floor damage in dishwasher area. Water debris collecting on inside of ice machine. Box of lids/cups on floor in wait station area, bags of lids/cups on floor in bar area. Two food handler cards missing. Obtain and post by Dec. 28, 2001. General -- None noted. Compliance rating: 96 percent.

*POINTS KEY: Red violations are those most likely to cause food-borne illness and must be corrected at the time of inspection. Blue violations relate to the overall cleanliness and condition of operation and should be corrected by next inspection. Any establishment receiving more than 35 red or 60 total points is automatically reinspected within two weeks. If an establishment exceeds those limits twice in a calendar year, it is mandatorily closed for at least 24 hours.
