-COMMENTS: Red -- Several products in food warmer at cook line were not at required hot holding temperature (140°F or above). Mashed potato was 122°F, lasagna 94°F, Salisbury steak 130°F. Repeat violation. Products at buffet line were not hot held properly. Repeat 140°F or above. Baked chicken 110°F to 116°F, fried fish 115°F to 128°F. Correction. All hot foods were reheated to over 165°F. None of the three hand-washing sinks was provided with soap. Paper towels were missing also at hand sink next to dish-washing area. Correction made. Blue -- Uncovered pan in unwrapped ice cream cones was kept unprotected from consumers' contamination. Sneeze guard must be used. Plastic bags of food were piling on top of uncovered pans of cooked meats in small refrigerator at cook line. Ready-to-eat foods must be covered. Do not stack foods one on top of another when they are not wrapped/covered. Food-prep sink at cook line was leaking water. Repair is needed. Tiles were missing at several areas of kitchen. Walls at dish-washing area need serious cleaning (under the sink). At time of inspection, one floor drain at dish-washing machine area was not working, and unsanitary water was observed on kitchen floors. Entire kitchen floor must be cleaned and sanitized properly. Correction made. Manual dish-washing was not done properly. Sanitizing solution was not prepared correctly. Counter surfaces at cook line were not kept clean. Sanitation of surfaces is needed after they are contaminated (for example by bottoms of boxes of food products). General -- Re-inspection will be conducted. Compliance rating: 89 percent.

-COMMENTS: Red -- Paper towel dispenser at hand-wash sink empty of paper towel roll. Corrected, re-filled. Chicken pieces for fajitas at temperatures from 120 to 135°F. Must be hot held above 140°F. Water level in unit too low to contact insert pans. Blue -- Mixer arm of shake blender left uncleaned. Has old and dried milk product. Clean and sanitize regularly, especially prior to subsequent use. General -- Final cook temperatures 170 to 182°F. Compliance rating: 92 percent.

-COMMENTS: Red -- None noted. Blue -- Can opener needs cleaning/sanitizing. Base of walls at dish-washing area (three-compartment sink) needs repair. Walls are no longer easily cleanable. Floors in walk-in cooler and at hot line must be smooth, nonabsorbent and easily cleanable. Floors definitely need repair. Floor at soda pop tanks, storage need repair. Ceiling at food-prep area needs cleaning. At next kitchen remodel, "popcorn" style ceiling at food prep area must be removed. General -- Lots of improvements since last inspection. Very good temperatures. Compliance rating: 98 percent.
