-COMMENTS: Red -- Chicken cooling in about 6-inch depth (in center of pan mounded up) at 75°F. Must cool in 2-inch or less food depths. Stain remover stored on shelf (in cupboard) next to bowls and pitcher. Blue -- No chlorine residual on wiping cloths. Store and/or dip wiping cloths in a sanitizing solution to keep a chlorine residual on wiping cloths. Wall, ceiling and tile damage. Some areas not easily cleanable. All surfaces must be smooth, nonabsorbent and easily cleanable. Restroom door (employee restroom) needs a self-closing hinge. Ice scoop directly on top of ice machine. Store on clean tray/container. General cleaning (floor, cupboards, equipment, etc.) needs additional and thorough cleaning. New hand-washing sink and cabinet, a very good improvement.
