-COMMENTS: Red -- Cut cantaloupe and diced hard-boiled eggs were kept at buffet line at 58°F to 59°F (eggs) and 49°F to 51°F (produce). Cold holding of foods must be at 45°F or less. Correction: Foods pulled from buffet line and chilled in walk-in cooler. Cut sausages were found in covered container placed in refrigerator at hot line. Food temperature was 65°F to 68°F. Per cook on duty, sausages were cooked a half-hour ago, left out to cool at room temperature, then placed in container to finish cooling in refrigerator. You must not cool foods at room temperature. You must not cover foods while cooling. Spray can of WD-40 was stored on rack above open containers of salt packets and several other food-related items. Toxic chemicals must be kept away and below foods. Blue -- Soda pop nozzles need cleaning and sanitizing on a daily basis. At time of inspection they were not clean. Sanitizing solution for manual dishwasher was not prepared correctly. No sanitizer was detected. Wall tiles were missing at dishwashing machine area. Baseboard tiles were missing at places causing accumulation of dirt and gray water. Fixing is needed and completed by March 21. Several food workers didn't have a current food-handler card for inspection. Nonfood-related items (broken light bulbs, maintenance tools and equipment) were found among other food-related products in dry storage area. Clear separation must be made between non-food and food items. General -- A reinspection will be conducted. Compliance rating: 83 percent.
