Steam wands of espresso machine need serious cleaning and sanitizing between uses. Wiping cloth at espresso machine did not have any residual chlorine. Bleach solution was prepared. In-use stirring spoons with milk residue were kept in warm water (55°F). They must be kept in cold water 45°F or below. General -- Temperatures were good. Compliance rating: 97 percent.
