Correction made. Foods discarded by manager. Shell eggs were kept next to very hot grill. Temperatures measured in one egg was 85°F. Eggs must be kept at 45°F or below at all times. Bags of ice may be used to cover eggs at kitchen counts. Cut produce (cantaloupe) was kept at room temperature (64°F) at cook line. Cut produce must be kept cold at 45°F or below. Baked potatoes (118° to 120°), country gravy (112°F to 125°F), brown gravy (110°F to 138°F) were kept at steam table. Hot holding must be at 140°F or above. Manager discarded all temperature-abused foods. Blue -- Cleaning is needed under the gas stoves (both sides) at cook line. Can opener (blade) needs cleaning/sanitizing. At least one sink must be fixed by March 25, until then workers should use wash sink of three-compartment sink. Blue -- Microwave installed in restroom. Food and food processing equipment (and service items such as cups, etc.) cannot be stored in restroom areas. Restroom door was propped open. Will allow insects to fly back and forth from restroom to counters and other food contact surfaces. No sanitizer available for use. Espresso wand not cleaned after each use. Two employees did not have current food-handler cards posted for review. Three cards that are posted will expire in April and May. Spoons for espresso drink mixing and foam scooping were stored in 69°F water. Water needs to be below 45°F or above 140°F. Metal stem thermometer available (in a drawer) but not being used to evaluate milk temperature. Pitchers are rinsed between uses and left out. Must be stored in refrigeration between uses if you cannot wash, rinse and sanitize them. General -- None noted. Compliance rating: 90 percent.

Water follows electrical lines and is leaking into cafe. No food is being contaminated at this time. Fix leak by March 25, 2002. Each bar has a refrigerator in the storage area that has no thermometer. Ice machine (in bar area) has collected water debris on stainless steal "shelf" (inside ice bin). Needs more frequent cleaning. General -- Nice job in restrooms in lounge area. Very clean kitchen. Compliance rating: 91 percent.
